- 1 pound turkey bacon
- 1 can black beans, drained
- 1 can kidney beans, drained
- 1 can corn, drained
- 2 cups diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 tablespoon taco seasoning
- 1 bell pepper, chopped
- Cook the turkey bacon in a large pot until crispy. Remove and chop into pieces.
- In the same pot, sauté onions and garlic until soft.
- Add the chopped bell pepper and cook for an additional 3 minutes.
- Stir in the diced tomatoes, corn, black beans, kidney beans, chicken broth, and taco seasoning.
- Add the chopped turkey bacon back to the pot and simmer for 20 minutes.
