  • 2 stalks celery, diced

  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup pasta (any type)
  • 2 cups cooked chicken, shredded
  • 1 cup spinach, roughly chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic; sauté until the onion is translucent.
  3. Stir in the carrots and celery; cook for about 5 minutes.
  4. Add the thyme, chicken broth, and diced tomatoes. Bring to a boil.
  5. Stir in the pasta and cook until al dente.
  6. Add the shredded chicken and spinach; simmer until heated through.
  7. Season with salt and pepper to taste before serving.
