  • 2 cups spinach, fresh

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Stir in carrots and celery, cook for about 5 minutes.
  4. Add vegetable broth, diced tomatoes, oregano, basil, salt, and pepper; bring to a boil.
  5. Once boiling, add pasta and cook until al dente, about 8-10 minutes.
  6. Stir in spinach and cook for an additional 2 minutes.
