  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 2 cups cooked chicken, shredded
  • 1 cup small pasta (like orzo or ditalini)
  • 1 cup frozen peas
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onions and garlic and sauté until softened.
  2. Add the carrots and celery and cook for another 5 minutes.
  3. Pour in the chicken broth, thyme, oregano, and bay leaf. Bring to a boil.
  4. Add the cooked chicken and pasta. Cook according to pasta package instructions until tender.
  5. Stir in the frozen peas and cook for an additional 2 minutes.
  6. Season with salt and pepper to taste. Remove bay leaf before serving.
