Italian Penicillin Soup Recipe

A delicious and healthy twist on the traditional penicillin soup using turkey bacon.

Ingredients

  • 4 cups chicken broth
  • 1 cup chopped turkey bacon
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 2 cups egg noodles
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove from pot and set aside.
  2. Add onion, carrots, and celery to the pot and sauté until soft.
  3. Stir in the garlic, thyme, and black pepper, and cook for 1 minute.
  4. Add the chicken broth and bring to a boil.
  5. Add the egg noodles and cook until tender.
  6. Stir in the cooked turkey bacon and fresh parsley before serving.

Notes

  • Feel free to add any other vegetables you like.
  • This soup can be made ahead and stored in the fridge.
