Italian Penicillin Soup Recipe

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 6 cups chicken broth
  • 1 cup small pasta, such as ditalini
  • 2 cups cooked chicken, shredded
  • 1 cup spinach, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery. Sauté until the vegetables are tender.
  3. Stir in the garlic and thyme, cooking for another minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the pasta and cook according to package directions.
  6. Once the pasta is cooked, stir in the chicken and spinach.
  7. Season with salt and pepper to taste before serving.

Notes

  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
  • For added flavor, try adding a squeeze of lemon juice before serving.
