  • 8 cups chicken broth
  • 1 pound spinach, fresh
  • 1 cup orzo pasta
  • 3 large eggs
  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble it, leaving the drippings in the pot.
  2. Add the carrots, celery, onion, and garlic to the pot and sauté until softened.
  3. Pour in the chicken broth and bring it to a boil.
  4. Add the orzo pasta and cook until al dente.
  5. Stir in the spinach and crumbled turkey bacon until the spinach wilts.
  6. In a bowl, beat the eggs with Parmesan cheese, then slowly drizzle into the soup while stirring.
  7. Season with black pepper and salt before serving.
