Layered Mediterranean Vegetable Lasagna

A delicious and colorful vegetable lasagna packed with Mediterranean flavors, perfect for a hearty meal.

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups marinara sauce
  • 1 cup chopped spinach
  • 1 cup sliced zucchini
  • 1 cup sliced bell peppers
  • 1 cup mushrooms, sliced
  • 2 cups shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. In a large bowl, mix the ricotta cheese, spinach, oregano, basil, salt, and pepper.
  4. In a baking dish, spread a layer of marinara sauce on the bottom.
  5. Layer 3 lasagna noodles over the sauce.
  6. Spread 1/3 of the ricotta mixture over the noodles, followed by a layer of zucchini, bell peppers, and mushrooms.
  7. Sprinkle 1/3 of the mozzarella cheese on top.
  8. Repeat the layering process two more times, finishing with mozzarella on top.
  9. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  10. Let it cool for 10 minutes before slicing and serving.

Notes

  • This lasagna can be prepped ahead of time and stored in the refrigerator for up to 24 hours before baking.
  • Feel free to customize with your favorite vegetables.
