- 9 lasagna noodles lasagna noodles
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups spinach
- 1 cup sliced mushrooms
- 1 cup zucchini, sliced
- 1 cup bell peppers, chopped
- 1 can (24 oz) marinara sauce
- 2 tablespoons olive oil
- 1 teaspoon oregano
- 1 teaspoon basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a skillet, heat olive oil over medium heat. Sauté mushrooms, zucchini, and bell peppers until tender.
- In a baking dish, spread a layer of marinara sauce, followed by a layer of noodles, then ricotta cheese, veggies, mozzarella, and a sprinkle of Parmesan.
- Repeat the layers until all ingredients are used, finishing with noodles and sauce on top.
- Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until golden.
- Let it cool for 10 minutes before serving.

- For added flavor, use fresh herbs.
- Let the lasagna sit before cutting for cleaner slices.
