Layered Mediterranean Vegetable Lasagna

A delightful dish featuring layers of fresh vegetables and creamy cheese.

Ingredients

  • 9 lasagna noodles lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups spinach
  • 1 cup sliced mushrooms
  • 1 cup zucchini, sliced
  • 1 cup bell peppers, chopped
  • 1 can (24 oz) marinara sauce
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté mushrooms, zucchini, and bell peppers until tender.
  4. In a baking dish, spread a layer of marinara sauce, followed by a layer of noodles, then ricotta cheese, veggies, mozzarella, and a sprinkle of Parmesan.
  5. Repeat the layers until all ingredients are used, finishing with noodles and sauce on top.
  6. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until golden.
  7. Let it cool for 10 minutes before serving.

Notes

  • For added flavor, use fresh herbs.
  • Let the lasagna sit before cutting for cleaner slices.
