Layered Sweet Potato Butternut Squash Carrot Lasagna

A deliciously layered lasagna made with sweet potatoes, butternut squash, and carrots.

Ingredients

  • 2 medium sweet potatoes
  • 2 cups butternut squash, peeled and diced
  • 1 cup carrots, grated
  • 2 cups ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté garlic until fragrant.
  3. Add sweet potatoes, butternut squash, and carrots, cooking until softened.
  4. In a baking dish, layer the vegetable mixture with ricotta, mozzarella, and Parmesan.
  5. Repeat layers until ingredients are used, finishing with cheese on top.
  6. Bake for 45 minutes until golden and bubbly.
  7. Allow to cool before slicing and serving.

Notes

  • For added flavor, include fresh herbs.
  • This lasagna can be made a day ahead and stored in the fridge.
