  • 2 cups mashed sweet potatoes
  • 1 cup butternut squash puree
  • 1 cup grated carrots
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. In a bowl, mix mashed sweet potatoes, butternut squash, and grated carrots.
  4. Spread a layer of the vegetable mixture on the bottom of a baking dish.
  5. Layer with lasagna noodles, ricotta, and mozzarella cheese.
  6. Repeat layers until all ingredients are used, finishing with mozzarella and Parmesan on top.
  7. Bake for 30-35 minutes until bubbling and golden.
  8. Let cool for a few minutes before serving.
