2 cups cooked lasagna noodles
2 cups mashed sweet potatoes
1 cup butternut squash puree
1 cup grated carrots
2 cups ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon dried basil
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Preheat the oven to 375°F (190°C).
In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
In a bowl, mix mashed sweet potatoes, butternut squash, and grated carrots.
Spread a layer of the vegetable mixture on the bottom of a baking dish.
Layer with lasagna noodles, ricotta, and mozzarella cheese.
Repeat layers until all ingredients are used, finishing with mozzarella and Parmesan on top.
Bake for 30-35 minutes until bubbling and golden.
Let cool for a few minutes before serving.
