Lemon Lentil Soup

A creamy, zesty twist on classic lentil soup.

Ingredients

  • 1 cup green lentils
  • 4 cups vegetable broth
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon black pepper
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion, carrots, and celery, and sauté until softened.
  3. Stir in garlic, cumin, turmeric, and black pepper, and cook for an additional minute.
  4. Add lentils and vegetable broth, bring to a boil, then reduce heat to low and simmer for 25-30 minutes.
  5. Stir in lemon juice and seasoning before serving.
  6. Garnish with fresh parsley.

  • For a creamier texture, blend a portion of the soup.
