Lemon Lentil Soup

A warm and comforting lemon lentil soup that’s easy to make at home.

Ingredients

  • 1 cup lentils
  • 1 medium onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery. Cook until softened.
  3. Stir in the garlic and dried thyme, and cook for another minute.
  4. Add the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer until lentils are tender.
  5. Stir in the lemon juice, and season with salt and pepper to taste.
  6. Serve hot, garnished with fresh herbs if desired.

Notes

  • For a creamier soup, use an immersion blender to puree part of the soup.
  • Fresh herbs like parsley or cilantro make a great garnish.
