  • 1 lemon, juiced and zested

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions, carrots, and celery, cooking until the vegetables are softened.
  2. Add the garlic and cumin, stirring for another minute until fragrant.
  3. Stir in the lentils, broth, salt, and pepper. Bring to a boil, then reduce to a simmer. Cover and cook for 25-30 minutes until lentils are tender.
  4. Stir in the lemon juice and zest, and let it simmer for an additional 5 minutes.
