- 4 large russet potatoes
- 1 pound shrimp, peeled and deveined
- 1 cup crab meat
- 1/2 cup cream cheese
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 2 tablespoons Cajun seasoning
- 3 tablespoons green onions, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Preheat your oven to 400°F (200°C).
- Wash and prick the potatoes with a fork, then bake in the oven for about 45-60 minutes or until tender.
- While the potatoes are baking, heat a skillet over medium heat and add the shrimp. Cook until pink and cooked through.
- In a bowl, combine cooked shrimp, crab meat, cream cheese, sour cream, cheddar cheese, Cajun seasoning, green onions, and lemon juice. Mix well.
- Once the potatoes are done, cut them in half lengthwise and scoop out a portion of the flesh.
- Mix the scooped potato flesh with the seafood mixture and refill the potato skins with this mixture.
- Top with additional cheddar cheese if desired.
- Return to the oven and bake for an additional 15-20 minutes, until the cheese is melted and bubbly.
- Serve warm and enjoy!
