Loaded Cajun Seafood Stuffed Potatoes

  • 4 large russet potatoes
  • 1 pound shrimp, peeled and deveined
  • 1 cup crab meat
  • 1/2 cup cream cheese
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 2 tablespoons Cajun seasoning
  • 3 tablespoons green onions, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and prick the potatoes with a fork, then bake in the oven for about 45-60 minutes or until tender.
  3. While the potatoes are baking, heat a skillet over medium heat and add the shrimp. Cook until pink and cooked through.
  4. In a bowl, combine cooked shrimp, crab meat, cream cheese, sour cream, cheddar cheese, Cajun seasoning, green onions, and lemon juice. Mix well.
  5. Once the potatoes are done, cut them in half lengthwise and scoop out a portion of the flesh.
  6. Mix the scooped potato flesh with the seafood mixture and refill the potato skins with this mixture.
  7. Top with additional cheddar cheese if desired.
  8. Return to the oven and bake for an additional 15-20 minutes, until the cheese is melted and bubbly.
  9. Serve warm and enjoy!

Notes

  • For extra flavor, you can add diced bell peppers to the seafood mixture.
