  • 2 large russet potatoes
  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 1 cup salsa

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake for 45 minutes or until tender.
  3. While the potatoes are baking, brown the ground beef in a skillet over medium heat, then drain excess fat.
  4. Add taco seasoning and a splash of water to the beef, stirring to combine. Cook for another 5 minutes.
  5. Once the potatoes are done, let them cool slightly then cut them open.
  6. Fluff the insides with a fork, then top with the seasoned beef, cheese, sour cream, green onions, and salsa.
  7. Serve immediately.
