- 4 whole wheat tortillas
- 1 cup spinach, fresh
- 1 cup feta cheese, crumbled
- 1 cup bell peppers, diced
- 1/2 cup olives, sliced
- 1 onion, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon oregano
- Heat olive oil in a pan over medium heat.
- Add onions and bell peppers, sautéing until soft.
- Add spinach and olives, cooking until spinach wilts.
- Remove from heat, then stir in crumbled feta and oregano.
- Place a tortilla in a separate pan over low heat.
- Spread the mixture on one half of the tortilla, fold over.
- Cook until golden on both sides, then cut and serve.
