Mediterranean Quesadillas

A delicious and nutritious twist on the classic quesadilla, packed with Mediterranean flavors.

Ingredients

  • 4 whole wheat tortillas
  • 1 cup spinach, fresh
  • 1 cup feta cheese, crumbled
  • 1 cup bell peppers, diced
  • 1/2 cup olives, sliced
  • 1 onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon oregano

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onions and bell peppers, sautéing until soft.
  3. Add spinach and olives, cooking until spinach wilts.
  4. Remove from heat, then stir in crumbled feta and oregano.
  5. Place a tortilla in a separate pan over low heat.
  6. Spread the mixture on one half of the tortilla, fold over.
  7. Cook until golden on both sides, then cut and serve.

Notes

  • Serve with tzatziki sauce for dipping.
  • Feel free to add grilled chicken for extra protein.
