- 4 slices turkey bacon
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt to taste
- Fresh cilantro for garnish
- In a large pot, cook the turkey bacon until crispy. Remove and crumble.
- In the same pot, add olive oil and sauté the onion until translucent.
- Add the garlic and cook for another minute.
- Cut the corn kernels off the cob and add them to the pot.
- Pour in the chicken broth and bring to a boil.
- Reduce heat and stir in the heavy cream, chili powder, and cumin.
- Simmer for 20 minutes.
- Blend the soup until smooth or leave it chunky as preferred.
- Season with salt and top with crumbled turkey bacon and cilantro before serving.
