Mexican Street Corn Soup

A creamy and delicious soup inspired by Mexican street corn, featuring turkey bacon for added flavor.

  • 4 ears corn, husked
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. In the same pot, add olive oil and sauté the onion until translucent.
  3. Add the garlic and cook for another minute.
  4. Cut the corn kernels off the cob and add them to the pot.
  5. Pour in the chicken broth and bring to a boil.
  6. Reduce heat and stir in the heavy cream, chili powder, and cumin.
  7. Simmer for 20 minutes.
  8. Blend the soup until smooth or leave it chunky as preferred.
  9. Season with salt and top with crumbled turkey bacon and cilantro before serving.
