  • 1 pound ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 6 cups chicken broth
  • 12 lasagna noodles, broken into pieces
  • 1 tablespoon Italian seasoning
  • salt and pepper to taste
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add onion and garlic, and sauté until translucent.
  3. Stir in crushed tomatoes, chicken broth, lasagna noodles, Italian seasoning, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Stir in ricotta cheese and half of the mozzarella until well combined.
  6. Serve hot, garnished with remaining mozzarella, Parmesan, and fresh basil.

  • This soup can be reheated on the stove over low heat.
