Mouthwatering One Pot Lasagna Soup

  • 1 pound ground beef
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 8 ounces lasagna noodles broken
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese shredded
  • 1/2 cup parmesan cheese grated
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add chopped onion and minced garlic; cook until softened.
  3. Stir in crushed tomatoes, chicken broth, and Italian seasoning. Bring to a boil.
  4. Add broken lasagna noodles and cook until tender.
  5. Stir in ricotta cheese and half of the mozzarella. Mix well.
  6. Serve topped with remaining mozzarella and grated parmesan.

  • For added flavor, let the soup simmer longer.
  • Substitute ground turkey for a leaner option.
