  • 1 pound turkey bacon
  • 1 cup chicken ham, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 9 lasagna noodles, broken
  • 2 cups spinach
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy, then remove and set aside.
  2. In the same pot, add the onion and garlic, cooking until softened.
  3. Add the chicken ham and cook for a few minutes before adding the crushed tomatoes and chicken broth.
  4. Stir in the Italian seasoning, and add the broken lasagna noodles.
  5. Simmer until the noodles are al dente, about 12-15 minutes.
  6. Stir in the spinach, cooked turkey bacon, and ricotta cheese.
  7. Top with mozzarella and Parmesan cheese, allowing to melt before serving.

Notes

  • For a vegetarian version, omit the turkey bacon and chicken ham.
  • Feel free to add other vegetables such as zucchini or bell peppers.
