Mouthwatering One Pot Lasagna Soup

A rich and flavorful lasagna soup that combines turkey bacon and chicken ham for a comforting meal.

  • 8 ounces lasagna noodles
  • 6 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 1 can (15 ounces) crushed tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add olive oil, onion, and garlic. Sauté until fragrant.
  3. Add chicken ham, chicken broth, crushed tomatoes, basil, and oregano. Bring to a boil.
  4. Stir in lasagna noodles and cook until al dente.
  5. Add salt and pepper to taste.
  6. Serve each bowl with a dollop of ricotta and sprinkle with mozzarella. Crumble the turkey bacon on top.

Notes

  • For a vegetarian option, omit the turkey bacon and chicken ham.
  • Feel free to add more vegetables like spinach or bell peppers.
