Mouthwatering Roasted Poblano Soup

  • 4 large poblano peppers
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 cup heavy cream
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place poblano peppers on a baking sheet and roast for 20-25 minutes, turning halfway, until skin is charred.
  3. Remove from oven, cover with foil, and let steam for 10 minutes.
  4. Once cooled, peel the skin off, remove the seeds and chop.
  5. In a pot, heat olive oil over medium heat. Add onions and garlic, sauté until onions are translucent.
  6. Add the roasted poblano peppers, vegetable broth, and cumin. Bring to a boil, then simmer for 15 minutes.
  7. Using an immersion blender, blend until smooth. Stir in heavy cream and season with salt and pepper.
  8. Serve hot.

Notes

  • For a smokier flavor, you can use smoked paprika.
