- 4 large poblano peppers
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 cup heavy cream
- salt to taste

- Preheat the oven to 400°F (200°C).
- Place poblano peppers on a baking sheet and roast for 20-25 minutes, turning halfway, until skin is charred.
- Remove from oven, cover with foil, and let steam for 10 minutes.
- Once cooled, peel the skin off, remove the seeds and chop.
- In a pot, heat olive oil over medium heat. Add onions and garlic, sauté until onions are translucent.
- Add the roasted poblano peppers, vegetable broth, and cumin. Bring to a boil, then simmer for 15 minutes.
- Using an immersion blender, blend until smooth. Stir in heavy cream and season with salt and pepper.
- Serve hot.
