  • 2 tablespoons olive oil

  • 1 cup vegetable broth
  • 1 cup sour cream
  • 2 teaspoons Dijon mustard
  • 1 teaspoon paprika
  • 8 ounces egg noodles

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Add onions and garlic, cooking until softened.
  3. Add mushrooms and seitan; sauté until mushrooms are golden.
  4. Stir in soy sauce, vegetable broth, and mustard; simmer for 10 minutes.
  5. Reduce heat and mix in sour cream and paprika.
  6. Cook noodles according to package instructions, then combine with the stroganoff mixture.
