Olive Garden Chicken Gnocchi Soup

  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 pound cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups gnocchi
  • 1 cup fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, garlic, carrots, and celery; sauté until tender.
  2. Add shredded chicken and chicken broth, and bring to a simmer.
  3. Stir in heavy cream, gnocchi, and Italian seasoning; cook until gnocchi is tender.
  4. Fold in fresh spinach and cook until just wilted.
  5. Season with salt and pepper to taste. Serve hot.

Notes

  • For added flavor, use rotisserie chicken.
  • This soup thickens as it cools; add more broth if needed.
