  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, carrots, and celery. Cook until tender.
  3. Stir in garlic and thyme, cooking for another minute.
  4. Add chicken broth and bring to a boil.
  5. Stir in gnocchi and cook until they float to the top.
  6. Mix in shredded chicken and spinach.
  7. Reduce heat and stir in heavy cream.
