  • 2 cups rice
  • 1 pound chicken thighs
  • 1 cup honey BBQ sauce
  • 3 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 1 cup mixed vegetables
  • Salt and pepper to taste

Instructions

  1. In a large pan, heat olive oil over medium-high heat.
  2. Season the chicken thighs with garlic powder, paprika, salt, and pepper.
  3. Sear the chicken thighs in the pan for about 4-5 minutes on each side until golden brown.
  4. Add the rice to the pan, stirring well to combine.
  5. Pour in the chicken broth and honey BBQ sauce, bring to a simmer.
  6. Add mixed vegetables and cover the pan.
  7. Reduce heat to low and cook for 20 minutes or until the rice is fully cooked.
  8. Remove from heat and let it sit for 5 minutes before serving.

  • For added flavor, marinate the chicken thighs in BBQ sauce a few hours prior to cooking.
