  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • 1 cup chopped vegetables (bell peppers, onions)
  • 1 teaspoon dried herbs (thyme, rosemary)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix the olive oil, salt, pepper, garlic powder, and paprika.
  3. Add the chicken thighs to the bowl and coat them evenly with the seasoning mixture.
  4. In a baking dish, arrange the chicken thighs and scatter the chopped vegetables around them.
  5. Sprinkle dried herbs over the chicken and vegetables.
  6. Bake in the preheated oven for 30-35 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Remove from the oven and let it rest for a few minutes before serving.
