  • 4 large russet potatoes
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons fresh chives, chopped

Instructions

  1. Cook turkey bacon in a large pot over medium heat until crispy. Remove and set aside.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Add diced potatoes and chicken ham, stirring for a few minutes.
  4. Pour in the chicken broth, bring to a boil, then reduce heat and simmer until potatoes are tender.
  5. Use an immersion blender to blend the soup until smooth.
  6. Stir in the heavy cream, salt, and black pepper. Heat through.
  7. Serve hot, topped with crumbled turkey bacon, cheddar cheese, and chives.

Notes

  • For a vegetarian version, omit bacon and use vegetable broth.
  • Add more toppings like sour cream or additional cheese for extra flavor.
