Perfect Mini Beef Wellington Bites

  • 1 pound beef tenderloin
  • 1 tablespoon olive oil
  • 1 cup mushrooms, finely chopped
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 package puff pastry
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat and cook mushrooms, shallot, and garlic until soft.
  3. Season with thyme and remove from heat to cool.
  4. Cut the beef into small pieces and sear in the skillet until browned.
  5. Roll out puff pastry and cut into small squares.
  6. Place a spoonful of the mushroom mixture and a piece of beef in the center of each pastry square.
  7. Fold the pastry over the filling and seal well.
  8. Brush with beaten egg and place on a baking sheet.
  9. Bake in the oven for 15-20 minutes or until golden brown.
