Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a food processor, blend pistachios until finely ground.
  3. In a large bowl, whisk together olive oil and granulated sugar until fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. In another bowl, combine flour, baking powder, and salt. Gradually add this to the wet mixture, stirring until just combined.
  6. Gently fold in the blackberries and ground pistachios.
