Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, pulse the pistachios until finely ground.
  3. In a saucepan, combine sugar, cornstarch, and salt. Gradually whisk in milk.
  4. Cook over medium heat until thickened, stirring constantly.
  5. In a bowl, whisk egg yolks and gradually add a small amount of the hot mixture to temper the eggs.
  6. Return the egg mixture to the pan and cook for another 2 minutes.
  7. Remove from heat and stir in vanilla and ground pistachios.
  8. Pour the filling into the prepared pie crust and bake for 25 minutes.
