1 cup pistachios, shelled
3/4 cup granulated sugar
1/4 cup cornstarch
1/4 teaspoon salt
2 cups milk
3 large egg yolks
1 teaspoon vanilla extract
1 prepared pie crust
Instructions
Preheat your oven to 350°F (175°C).
In a food processor, pulse the pistachios until finely ground.
In a saucepan, combine sugar, cornstarch, and salt. Gradually whisk in milk.
Cook over medium heat until thickened, stirring constantly.
In a bowl, whisk egg yolks and gradually add a small amount of the hot mixture to temper the eggs.
Return the egg mixture to the pan and cook for another 2 minutes.
Remove from heat and stir in vanilla and ground pistachios.
Pour the filling into the prepared pie crust and bake for 25 minutes.
Let cool before serving.
