1 box yellow cake mix
1/2 cup unsalted butter, melted
1 large egg
8 ounces cream cheese, softened
2 large eggs
1 teaspoon pure vanilla extract
4 cups powdered sugar
1 cup pistachio nuts, chopped
Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the yellow cake mix, melted butter, and 1 egg until well combined. Spread this mixture evenly into the bottom of a greased baking dish.
In another bowl, beat together the softened cream cheese, 2 eggs, and vanilla extract until smooth. Gradually add in the powdered sugar, mixing until fully incorporated.
Stir in the chopped pistachios, then pour the cream cheese mixture over the cake layer in the baking dish.
Bake for 35-40 minutes, or until the top is lightly golden and a toothpick comes out clean.
Allow to cool before serving.
Notes
You can substitute the pistachios with walnuts or almonds for a different flavor.
Serve with whipped cream or icing on top for extra indulgence!
