Pistachio Mascarpone Layer Cake

A luscious and decadent dessert that combines layers of fluffy cake with creamy mascarpone frosting and delightful pistachio flavor.

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • 1 cup whole milk
  • 1 tablespoon vanilla extract
  • ½ cup finely chopped pistachios
  • 1 cup mascarpone cheese
  • 2 cups powdered sugar
  • ½ cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract and milk.
  5. Gradually add flour, mixing until just combined. Fold in the pistachios.
  6. Divide the batter between the prepared pans and smooth the tops.
  7. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  9. In a separate bowl, beat mascarpone cheese and powdered sugar until smooth.
  10. In another bowl, whip heavy cream to stiff peaks and fold into the mascarpone mixture.
  11. Once the cake layers are cool, spread the mascarpone frosting between the layers and on top of the cake.
  12. Garnish with additional pistachios if desired.

Notes

  • For a richer flavor, consider toasting the pistachios before adding them to the batter.
  • This cake pairs wonderfully with coffee or tea.
