Rotisserie Chicken Mushroom Soup

A warm and hearty soup featuring rotisserie chicken and mushrooms, perfect for cold nights.

  • 2 cups rotisserie chicken, shredded
  • 1 cup mushrooms, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until translucent.
  2. Add mushrooms and cook until softened.
  3. Pour in the chicken broth, and add shredded rotisserie chicken.
  4. Stir in thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Stir in heavy cream and heat through before serving.
