  • 3 pounds beef roast
  • 1 cup vinegar
  • 1 cup water
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 bay leaves
  • 1 teaspoon peppercorns
  • 1 teaspoon salt
  • 1 tablespoon sugar

Instructions

  1. Combine vinegar, water, onion, carrots, bay leaves, peppercorns, salt, and sugar in a bowl to create a marinade.
  2. Place the beef roast in the marinade and refrigerate for at least 3 days, turning occasionally.
  3. After marinating, remove the roast and pat dry.
  4. In a large pot, brown the roast in a small amount of oil on all sides.
  5. Add the marinade to the pot and cover. Simmer for 3 hours until the meat is tender.
  6. Remove the roast, let it rest, then slice and serve with gravy made from the cooking liquid.
