Sheet Pan Chicken Pitas

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 whole wheat pitas
  • 1 cup cherry tomatoes
  • 1 cucumber, diced
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
  3. Coat the chicken breasts in the mixture and place them on a sheet pan.
  4. Add cherry tomatoes to the pan.
  5. Bake for 25-30 minutes or until the chicken is cooked through.
  6. Remove from the oven and let cool slightly.
  7. Slice the chicken and serve in pitas with cucumbers and parsley.

Notes

  • For added flavor, marinate the chicken for a few hours before cooking.
  • Feel free to add any vegetables you like.
