Shepherd’s Pie Baked Potato

  • 4 large Russet potatoes
  • 1 pound ground lamb or beef
  • 1 onion, diced
  • 2 carrots, diced
  • 1 cup peas
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 cup beef broth
  • 1/2 cup shredded cheese
  • 1/4 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Prick the potatoes with a fork and bake for 45-60 minutes until tender.
  3. In a skillet, cook the ground meat over medium heat until browned.
  4. Add onion, carrots, and garlic, cooking until softened.
  5. Stir in tomato paste, Worcestershire sauce, thyme, rosemary, and beef broth.
  6. Add peas and let simmer for 5 minutes.
  7. Once potatoes are cooked, remove from the oven and let cool slightly.
  8. Cut open the potatoes and fluff the insides with a fork.
  9. Mix in milk and butter, then season with salt and pepper.
  10. Layer the meat mixture on top of the potato flesh and sprinkle with cheese.
  11. Bake for another 15 minutes until cheese is melted and bubbly.
