- 4 large Russet potatoes
- 1 pound ground lamb or beef
- 1 onion, diced
- 2 carrots, diced
- 1 cup peas
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 cup beef broth
- 1/2 cup shredded cheese
- 1/4 cup milk
- 2 tablespoons butter
- Salt and pepper to taste
- Preheat oven to 400°F (200°C).
- Prick the potatoes with a fork and bake for 45-60 minutes until tender.
- In a skillet, cook the ground meat over medium heat until browned.
- Add onion, carrots, and garlic, cooking until softened.
- Stir in tomato paste, Worcestershire sauce, thyme, rosemary, and beef broth.
- Add peas and let simmer for 5 minutes.
- Once potatoes are cooked, remove from the oven and let cool slightly.
- Cut open the potatoes and fluff the insides with a fork.
- Mix in milk and butter, then season with salt and pepper.
- Layer the meat mixture on top of the potato flesh and sprinkle with cheese.
- Bake for another 15 minutes until cheese is melted and bubbly.
