Short Rib Ragu

Enjoy a rich and flavorful short rib ragu that is perfect for cozy dinners.

Ingredients

  • 2 pounds short ribs
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 1 cup red wine
  • 2 cups beef broth
  • 1 can (14.5 ounces) crushed tomatoes
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium-high heat and brown the short ribs on all sides.
  2. Remove the ribs and sauté the onion, carrots, and garlic in the same pot until soft.
  3. Deglaze the pot with red wine, scraping up any browned bits.
  4. Add the beef broth, crushed tomatoes, thyme, bay leaf, and the short ribs back into the pot.
  5. Bring to a simmer, cover, and cook on low heat for about 3 hours until the meat is tender.
  6. Shred the meat and return it to the sauce, discarding bones and bay leaf.
  7. Serve over pasta or polenta.
