Shrimp & Lobster Cheddar Bay Biscuit Pot Pie

  • 1 pound shrimp, peeled and deveined
  • 1 pound lobster meat, cooked and chopped
  • 1 cup frozen mixed vegetables
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups seafood stock
  • 1 cup heavy cream
  • 1 teaspoon Old Bay seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 package Cheddar Bay biscuit mix

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, melt butter over medium heat. Add onions and garlic, cooking until soft.
  3. Stir in flour and cook for 1 minute.
  4. Add seafood stock and heavy cream, whisking until smooth. Cook until thickened.
  5. Stir in shrimp, lobster, mixed vegetables, Old Bay, salt, and pepper. Pour filling into a baking dish.
  6. Prepare Cheddar Bay biscuit mix according to package instructions and drop spoonfuls on top of the filling.
  7. Bake in preheated oven for 20-25 minutes until biscuits are golden brown.

Notes

  • For a richer flavor, add a splash of white wine to the filling.
  • Garnish with chopped parsley before serving.
