1 pound shrimp, peeled and deveined
1 pound lobster meat, cooked and chopped
1 cup frozen mixed vegetables
1/2 cup chopped onion
2 cloves garlic, minced
1/4 cup butter
1/4 cup all-purpose flour
2 cups seafood stock
1 cup heavy cream
1 teaspoon Old Bay seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 package Cheddar Bay biscuit mix
Instructions
Preheat the oven to 400°F (200°C).
In a large skillet, melt butter over medium heat. Add onions and garlic, cooking until soft.
Stir in flour and cook for 1 minute.
Add seafood stock and heavy cream, whisking until smooth. Cook until thickened.
Stir in shrimp, lobster, mixed vegetables, Old Bay, salt, and pepper. Pour filling into a baking dish.
Prepare Cheddar Bay biscuit mix according to package instructions and drop spoonfuls on top of the filling.
Bake in preheated oven for 20-25 minutes until biscuits are golden brown.
Notes
For a richer flavor, add a splash of white wine to the filling.
Garnish with chopped parsley before serving.
