Slow Cooker Chicken Burrito Bowl

A delicious and easy slow cooker chicken burrito bowl recipe that’s perfect for the whole family.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1 cup salsa
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • salt to taste
  • 3 cups cooked rice
  • 1 cup shredded cheese

Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add black beans, corn, bell pepper, onion, salsa, chili powder, cumin, and salt.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Once cooked, shred the chicken with two forks and stir everything together.
  5. Serve over rice and top with shredded cheese.

Notes

  • For added flavor, marinate the chicken in spices overnight.
  • Use different beans or add more vegetables as desired.
