Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 slices turkey bacon, chopped
  • 4 cups chicken broth
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add the onion and garlic, cooking until softened.
  3. Add the diced potatoes, chicken broth, paprika, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  5. Use an immersion blender to puree the soup until smooth, or carefully transfer to a blender.
  6. Stir in the heavy cream and cook for an additional 5 minutes.
  7. Serve hot, topped with crispy turkey bacon.
