- 1 pound chicken breasts
- 6 slices turkey bacon
- 1 cup cream cheese
- 2 cups chicken broth
- 1 cup shredded cheddar cheese
- 1 cup diced jalapeños
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
- In a large pot, heat olive oil over medium heat and add turkey bacon. Cook until crispy, then remove and set aside.
- Add onion and garlic to the pot and sauté until onions are translucent.
- Stir in diced jalapeños and cook for another 2-3 minutes.
- Add chicken breasts, chicken broth, paprika, cumin, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes until chicken is cooked through.
- Remove chicken, shred it, and return to the pot.
- Stir in cream cheese and cheddar cheese until melted and combined.
- Crush the crispy turkey bacon and add it back to the soup. Serve warm.
Notes
- Add more or less jalapeños based on spice preference.
- This soup can be blended for a creamier texture.
