  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 pound cooked salmon, flaked
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 avocado, sliced
  • 1/4 cup green onions, chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Rinse sushi rice until water runs clear, then cook with water according to package instructions.
  3. In a bowl, mix rice vinegar, sugar, and salt until dissolved.
  4. Once rice is cooked, combine with the vinegar mixture and let it cool.
  5. In a separate bowl, mix the flaked salmon, mayonnaise, and sriracha.
  6. Spread the sushi rice in a baking dish, then layer the salmon mixture on top.
  7. Bake for 15-20 minutes until heated through.
  8. Top with sliced avocado and green onions before serving.
