8 ounces rice noodles
4 strips turkey bacon
1 tablespoon vegetable oil
3 cloves garlic, minced
1 red bell pepper, sliced
1 green bell pepper, sliced
2 cups broccoli florets
3 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon sriracha (optional)
2 green onions, chopped
Instructions
Cook the rice noodles according to package instructions, then drain and set aside.
In a large skillet, cook the turkey bacon until crispy, then remove and chop.
Add vegetable oil to the skillet, then sauté garlic, bell peppers, and broccoli for 5-7 minutes until softened.
Add the cooked noodles, soy sauce, oyster sauce, sriracha, and turkey bacon to the skillet. Toss everything together and cook for an additional 2-3 minutes.
Garnish with chopped green onions before serving.
Notes
For a vegetarian version, substitute turkey bacon with tofu or mushrooms.
Adjust the spice level by adding more or less sriracha.
