A delicious and easy Walking Taco Casserole that the whole family will love.

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained
  • 1 can corn, drained
  • 2 cups tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1 cup sour cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat.
  3. Add taco seasoning and stir until well combined, cooking for an additional 5 minutes.
  4. In a large bowl, mix the beef, black beans, corn, and half of the cheese.
  5. Layer the tortilla chips in a baking dish and pour the beef mixture over the chips.
  6. Top with the remaining cheese and diced tomatoes.
  7. Bake for 20-25 minutes until cheese is melted and bubbly.
  8. Remove from oven and let cool slightly before serving.

Notes

  • For extra flavor, add sliced jalapeños on top before baking.
  • Serve with additional toppings like lettuce or guacamole.
