Zucchini Pizza Casserole

A delicious and healthy version of pizza that uses zucchini as a base.

Ingredients

  • 4 cups shredded zucchini
  • 1 cup Italian sausage, cooked
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded zucchini, cooked sausage, marinara sauce, half of the mozzarella, oregano, garlic powder, salt, and pepper.
  3. Transfer the mixture to a greased baking dish.
  4. Top with the remaining mozzarella cheese.
  5. Bake for 30-35 minutes or until melted and bubbly.
  6. Let it cool for a few minutes before serving.

Notes

  • For extra flavor, add red pepper flakes to taste.
  • You can substitute turkey sausage for a leaner option.
