Zuppa Toscana Soup

A creamy and flavorful soup featuring turkey bacon and hearty vegetables.

Ingredients

  • 6 slices turkey bacon
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • 2 large potatoes, diced
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. In the same pot, sauté the onion and garlic until translucent.
  3. Add chicken broth, potatoes, and Italian seasoning, simmer until potatoes are tender.
  4. Stir in the kale and heavy cream, cook for another 5 minutes.
  5. Season with salt and pepper, then top with crumbled turkey bacon before serving.

Notes

  • For a spicier kick, add red pepper flakes.
  • Can substitute turkey bacon with regular bacon for a richer flavor.
