Chicken Pot Pie Soup Recipe

A creamy and hearty chicken pot pie soup that brings all the comforting flavors in just one bowl.

Ingredients

  • 1 pound cooked chicken, shredded
  • 4 slices turkey bacon
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup frozen peas
  • 1/2 cup onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 2 teaspoons dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. Add onion, carrots, and celery to the pot; sauté until soft.
  3. Stir in flour, cooking for 1 minute.
  4. Gradually add chicken broth, whisking until smooth.
  5. Add chicken, peas, thyme, and bring to a simmer.
  6. Stir in heavy cream; season with salt and pepper.
  7. Serve hot, garnished with crumbled bacon.

Notes

  • For a thicker soup, add more flour.
  • Can be made ahead and reheated.
