Classic Lentil Soup

A deliciously hearty lentil soup recipe with turkey bacon that’s perfect for any season.

Ingredients

  • 1 cup lentils
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 6 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add the onions, garlic, carrots, and celery to the pot, cooking until the vegetables soften.
  3. Stir in the lentils, vegetable broth, thyme, and cumin.
  4. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until lentils are tender.
  5. Season with salt and pepper, and add crumbled bacon before serving.
